Dunedin Craft Distillers
Dunedin Craft Distillers is the first distillery in Aotearoa and one of only a handful worldwide, to produce botanical spirits from surplus bakery products that would otherwise go to landfill.
It all began in 2019 with a rant over coffee between friends about the thousands of tonnes of bakery products ending up in landfill across New Zealand each year.
The question arose, ‘Could we make alcohol from bread?’.
Jenny McDonald and Sue Stockwell are the team behind Dunedin Craft Distillers and Bastien Gallo joined our team in 2022 as chief mash stirrer and front-of-house specialist. He has introduced popular European digestives to our range and is now learning the craft of distillation.
We share a sense of humour, a care for the environment and a reluctance to let anything go to waste - qualities which underpin every decision we make in our quest to mitigate the environmental cost of bread and bakery products going to landfill.
Classic gin botanicals are steeped in our unique bread-base spirit before final distillation to produce Dunedin Dry Gin. No nonsense, juniper forward, with a citrus finish and just enough warmth and spice to take the chill off a brisk winter evening.. The 700ml bottle of Dunedin Dry Gin is packaged in a ClimatePartner certified carbon neutral bottle made from 70% recycled glass. These bottles are perfect for reuse in your own kitchen or pantry and come with a fully recyclable Vinolok glass stopper.
Dunedin Craft Distillers brew and distill delicious spirits from surplus bread. Each 700ml bottle saves roughly three loaves of bread from waste. All our spirits are proofed with rainwater harvested from Mount Cargill.
Three of our 250ml spirits packaged in a simple cardboard box with wood wool padding and our gift card. We can select the spirits for you or ask us to contact you to confirm your selection at the checkout.
We aim for simplicity and sustainability with our gift boxes and courier packs. We use recyclable paper tape to wrap packs. Where required for extra safety and padding, we use recycled bubblewrap.
Cacao (Chocolate) Vodka is made in Dunedin NZ from cacao husks and nibs, macerated in our bread-based spirits before final distillation to produce a deep, dark chocolate surprise. This vodka is not sweet - just pure cacao in a smooth and crystal clear spirit. Enjoy Cacao Vodka on the rocks or as a base for a vodka espresso martini. 40% ABV

The 500ml Cacao Vodka is pictured with recyclable T-Cork closure and wax seal.
Juniper, Coriander, Bay Leaf, Lemon. The Bay is a back-to-basics gin and one of our Working Title gins. Citrus and complex herbal notes predominate. Juniper and Coriander are macerated in our base spirit before final infusion with Bay Leaf and Lemon to create The Bay Gin. Complex and herbal with a bright citrus finish. Equally delicious alone on ice or paired with soda or a dry tonic. 45%ABV
